Overnight Oats with Cacao Nibs and Berries

This is THE way to enjoy oatmeal during summer!

Ingredients

  • 2/3 cup milk any kind
  • 1/3 cup Greek yogurt plain or vanilla
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon cacao nibs or mini chocolate chips
  • 1 tablespoon chia seeds
  • 3/4 cup rolled oats see note
  • Salt a pinch
  • 1/2 cup berries any kind, to serve

Instructions

  • In a mason jar or serving bowl, whisk together the milk, Greek yogurt, vanilla, and maple syrup until well combined.
  • Stir in the cacao nibs, chia seeds, oats, and a pinch of salt.
  • Cover and place in refrigerater overnight, or for up to 5 days.
  • When ready to eat, top with your choice of berries and extra cacao nibs if you like. Make sure to give a good stir before enjoying.

Notes

  1. Although these oats are safe to keep in the fridge for up to 5 days, they do continue to soften the longer they sit. For this reason, I feel they are best enjoyed on the first or second day, but feel free to experiment.
  2. You can use quick oats if you want, though they have a tendency to get mushy pretty quickly. But maybe that's something you want, in which case, go ahead!
